
MLA Potlam Biryani Recipe (Egg-Wrapped Biryani Parcel)
A luxurious, flavorful biryani served in a delightful omelette parcel—a treat fit for royalty!
🍗 Ingredients
For the Chicken Masala:
500g boneless chicken, cut into small pieces
2 tbsp oil + 1 tbsp ghee
1 onion, finely sliced
1 tbsp ginger garlic paste
1 green chili, chopped
1 tomato, finely chopped
¼ cup curd
½ tsp turmeric
1 tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
Salt, to taste
Fresh mint & coriander leaves, chopped
Juice of ½ lemon
For the Biryani Rice:
1.5 cups basmati rice (or seeraga samba rice)
1 bay leaf
2 cloves
1 cardamom
½ inch cinnamon stick
Salt, to taste
For the Egg Omelette Wrap:
2 eggs per wrap (for one large potlam)
A pinch of salt & pepper
Optional: Chopped onion, green chili, coriander
Oil or ghee for cooking
🔥 Instructions
Step 1: Cook the Rice
Boil the rice with whole spices (bay leaf, cloves, cardamom, cinnamon) and salt until it’s 90% cooked.
Drain and set the rice aside.
Step 2: Prepare the Chicken Masala
Heat oil and ghee in a pan. Add sliced onions and sauté until golden brown.
Add green chili and ginger-garlic paste, and sauté until the raw smell disappears.
Stir in chopped tomatoes and cook until they soften.
Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.
Add chicken pieces, cook until they’re sealed and browned.
Add curd, salt, chopped mint, and coriander. Cook until the chicken is tender and the masala thickens.
Finish with a squeeze of lemon juice and remove from heat.
Step 3: Layer the Biryani
In a large bowl, gently mix the cooked rice and chicken masala together.
Optionally, layer with more mint leaves and a little ghee for extra richness.
Step 4: Make the Omelette Wrap
Whisk together 2 eggs with a pinch of salt, pepper, and optional chopped onion, green chili, and coriander.
Heat a wide non-stick pan and pour in the egg mixture to make a thin omelette.
Before the omelette sets completely, add a portion of the biryani mix in the center.
Fold the sides of the omelette over the filling, like a parcel or wrap.
Flip gently and cook for another 30 seconds to seal the wrap.

Serve with onion raita or mirchi ka salan (spicy chili curry).
Garnish with fried onions, coriander leaves, and lemon wedges for an extra burst of flavor.
