3–4 medium potatoes (boiled, peeled & diced)
2 tbsp oil (mustard oil for authentic flavor, or any cooking oil)
1 tsp mustard seeds
1 tsp cumin seeds
1–2 dried red chilies (optional, for heat)
1 tsp turmeric powder
1 tsp red chili powder (adjust to taste)
1 tsp coriander powder
½ tsp garam masala (optional – for depth)
Salt to taste
A few curry leaves (optional, for a South Indian twist)
Fresh coriander leaves, chopped (for garnish)
🍳 Step-by-Step Instructions
1. Prep the Potatoes
Boil potatoes just until fork-tender (not mushy). Peel and cut into bite-sized cubes.
2. Heat & Temper
In a pan, heat oil over medium flame.
Add mustard seeds and let them splutter.
Toss in cumin seeds, curry leaves, and dried red chilies. Sauté for a few seconds until fragrant.
3. Add the Spices
Lower the heat. Add turmeric, red chili powder, coriander powder, and salt.
Quickly stir to bloom the spices — don’t let them burn!
4. Mix in the Potatoes
Add the diced potatoes. Gently toss until evenly coated with the spice mixture.
